  • 4 cloves fresh garlic, minced
  • 1 red bell pepper, sliced into strips
  • 3 green onions, chopped (for garnish)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts into bite-sized pieces, season with salt and pepper.
  2. In a large skillet over medium-high heat, heat vegetable oil. Add chicken and cook for 6–8 minutes until golden brown and cooked through.
  3. In a small bowl, whisk together soy sauce, sriracha, honey, garlic, ginger, and cornstarch until smooth.
  4. Pour the sauce over the cooked chicken in the skillet; stir to coat evenly. Cook for an additional 3–5 minutes until the sauce thickens.
  5. Add sliced red bell peppers and stir-fry for 2 minutes until tender-crisp.
  6. Remove from heat and garnish with chopped green onions before serving.
