Instructions
- Cut chicken breasts into bite-sized pieces, season with salt and pepper.
- In a large skillet over medium-high heat, heat vegetable oil. Add chicken and cook for 6–8 minutes until golden brown and cooked through.
- In a small bowl, whisk together soy sauce, sriracha, honey, garlic, ginger, and cornstarch until smooth.
- Pour the sauce over the cooked chicken in the skillet; stir to coat evenly. Cook for an additional 3–5 minutes until the sauce thickens.
- Add sliced red bell peppers and stir-fry for 2 minutes until tender-crisp.
- Remove from heat and garnish with chopped green onions before serving.
