Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 3 cups powdered sugar (for icing)
  • Food coloring (as desired)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the egg and add vanilla extract; mix until combined.
  3. In another bowl, whisk together flour and baking powder. Gradually add this mixture to the butter mixture until fully incorporated; the dough should be soft yet firm.
  4. Roll out the dough on a floured surface to about 1/4 inch thick. Use a Christmas tree cookie cutter to cut shapes and place them on prepared sheets.
  5. Bake for 8-10 minutes or until edges are lightly golden. Cool on wire racks before decorating.
  6. Mix powdered sugar with food coloring and water to create icing. Decorate cooled cookies as desired.
