- 2 bell peppers (red and yellow), sliced
- 1 medium zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Lightly spray a sheet pan with nonstick cooking spray.
- Slice the Italian sausages into one-inch chunks. Chop the bell peppers, zucchini, and red onion.
- In a large bowl, combine the chopped sausages and veggies. Drizzle with olive oil and sprinkle with garlic powder, dried herbs, salt, and pepper. Toss until well coated.
- Spread the mixture evenly on the prepared sheet pan in a single layer.
- Roast in the preheated oven for 25-30 minutes until the sausages are cooked through (internal temperature of 160°F) and veggies are tender.
