Ingredients

  • 1 pound Italian sausages (spicy or sweet)
  • 2 bell peppers (red and yellow), sliced
  • 1 medium zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a sheet pan with nonstick cooking spray.
  2. Slice the Italian sausages into one-inch chunks. Chop the bell peppers, zucchini, and red onion.
  3. In a large bowl, combine the chopped sausages and veggies. Drizzle with olive oil and sprinkle with garlic powder, dried herbs, salt, and pepper. Toss until well coated.
