  • 1 lb flank or sirloin steak, cut into bite-sized pieces
  • 9 oz fresh or frozen cheese-filled tortellini
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 cups fresh spinach
  • ½ cup grated Parmesan cheese

Instructions

  1. Season steak pieces with salt and pepper. In a large skillet over medium-high heat, heat olive oil and brown the steak for about 4-5 minutes.
  2. Add water according to tortellini package instructions; bring to a boil. Add tortellini and cook until they float (about 3-4 minutes). Drain excess water.
  3. Push tortellini aside in the skillet, add garlic to the empty side, and sauté for 30 seconds until fragrant.
  4. Stir in spinach along with cooked tortellini and steak until spinach wilts slightly.
  5. Sprinkle Parmesan cheese over the mixture, stirring gently until melted and combined. Serve immediately.
