  • 34 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 small cucumber, grated and drained
  • 2 cloves fresh garlic, minced
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 4 soft pita breads
  • Chopped tomatoes (optional)
  • Sliced red onions (optional)
  • Shredded lettuce (optional)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add chicken breasts to the marinade and coat well. Cover and refrigerate for at least one hour.
  3. Grate cucumber and squeeze out excess moisture.
  4. In another bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper. Mix well and chill in the fridge until serving.
  5. Preheat your grill or skillet over medium-high heat.
  6. Remove chicken from marinade and discard leftover marinade.
  7. Grill or cook chicken for about 6 minutes per side until it reaches an internal temperature of 165°F (75°C).
  8. While the chicken rests, warm pita bread on a dry skillet or grill until soft.
  9. Slice grilled chicken into strips.
  10. Assemble gyros by placing sliced chicken in warm pita with tzatziki sauce and optional toppings like tomatoes, onions, and lettuce.
