Ingredients

  • 1 pound sirloin or ribeye steak
  • Salt and pepper, to taste
  • 2 medium fresh zucchini, sliced into half-moons
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter (or olive oil)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat your grill or skillet over medium-high heat.
  2. Generously season the steak with salt and pepper on both sides.
  3. Place the seasoned steak on the hot surface and cook for about 4–5 minutes per side for medium-rare or until desired doneness is reached.
  4. While the steak cooks, slice the zucchini. Once the steak is done, set it aside to rest.
  5. In the same pan, add butter along with minced garlic. Let it melt before tossing in the sliced zucchini. Sauté until tender, about 3–4 minutes.
  6. Slice the rested steak against the grain and arrange it on a plate with sautéed zucchini around it. Drizzle any remaining garlic butter over everything and garnish with chopped parsley.
