  • 1 cup fresh corn (or 1 can, drained)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 2 tsp chili powder

Instructions

  4. In the same skillet, sauté onions and bell peppers until softened (3-5 minutes). Add corn and black beans to warm through.
