- 3 large eggs
- 1.5 cups graham cracker crumbs

Instructions
- Preheat oven to 400°F (200°C). Roast peeled and chopped sweet potatoes on a parchment-lined tray for 25-30 minutes until tender. Let cool and mash.
- In a bowl, mix mashed sweet potatoes, cream cheese, both sugars, eggs, vanilla, cinnamon, and nutmeg until smooth.
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Bake at 350°F (175°C) for about 10 minutes.
- Pour sweet potato filling over the crust and bake at 325°F (160°C) for 50-60 minutes until edges are set.
- Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours.
