  • 1 tsp paprika
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sliced jalapeños (optional)
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly. Slice them into thin wedges.
  2. In a large bowl, drizzle olive oil over potato slices. Add salt, pepper, garlic powder, and paprika. Toss until evenly coated.
  3. Spread the seasoned potato slices on a baking sheet lined with parchment paper in a single layer. Bake for about 25-30 minutes until golden brown, flipping halfway through.
  4. Once crispy, remove potatoes from the oven and sprinkle shredded cheddar cheese generously on top. Return to oven for an additional 5-7 minutes until cheese is bubbly.
