Description

Cajun Sausage & Rice is a hearty, one-pot meal bursting with bold flavors, tender rice, and colorful vegetables that will warm your heart and tantalize your taste buds.

Ingredients

Scale
  • 1 lb Cajun or smoked sausage, sliced
  • 1 cup long-grain white rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. 1. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until soft (about 5 minutes).
  2. 2. Brown the Sausage: Push veggies aside and add sliced sausage. Cook until browned on all sides (around 5 minutes).
  3. 3. Add Garlic: Stir in minced garlic and cook for about 1 minute until fragrant.
  4. 4. Combine Ingredients: Pour in rice, chicken broth, and Cajun seasoning. Mix well to ensure no dry rice remains.
  5. 5. Bring to a Simmer: Increase heat to a boil, then lower to simmer. Cover and cook for about 20 minutes or until rice absorbs all liquid.
  6. 6. Fluff and Serve: Remove from heat and let sit covered for 5 minutes. Fluff with a fork before serving.
