Description

Indulge in this creamy Cheesy Sausage & Rice dish, where fluffy rice meets savory sausage and melty cheese for a delightful family meal.

Ingredients

Scale
  • 1 lb Italian sausage (sweet or spicy)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Instructions

  1. Chop the bell peppers and onion into bite-sized pieces. Mince the garlic.
  2. In a large skillet over medium heat, add the Italian sausage. Use a spatula to break it apart as it cooks until browned and fully cooked through (about 5-7 minutes).
  3. Add the chopped onions and bell peppers to the skillet with the sausage. Sauté for another 3-4 minutes until they soften.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Mix in the uncooked long-grain rice and chicken broth. Ensure everything is well combined before bringing it to a boil.
  6. Once boiling, reduce heat to low, cover with a lid, and let it simmer for about 20-25 minutes or until rice is tender and has absorbed all the liquid.
  7. Remove from heat and sprinkle shredded cheese generously on top. Cover again for a few minutes to allow cheese to melt.
  8. Transfer to plates and enjoy this comforting dish!
