Ingredients
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar (divided)
- 16 oz full-fat cream cheese, softened
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat your oven to 325°F (160°C) and grease an 8×8-inch baking dish.
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until combined. Press into the bottom of the baking dish.
- In another bowl, beat cream cheese until smooth. Gradually mix in remaining sugar and sour cream. Add eggs one at a time and stir in vanilla.
- Pour cheesecake filling over the crust and bake for about 25-30 minutes until set but slightly jiggly in the center.
- Cool for 10 minutes, then spread cherry pie filling on top and return to the oven for another 5-10 minutes.
- Allow to cool completely before chilling in the fridge for at least two hours before serving.
