- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 tablespoons taco seasoning
- 8 soft taco shells (whole wheat or corn)
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 avocado, sliced
- ½ cup sour cream
- ½ cup salsa
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with taco seasoning, then place in the baking dish. Bake for 25-30 minutes until cooked through (165°F internal temperature). Rest for 5 minutes before shredding.
- Warm taco shells in a skillet over medium heat for about a minute on each side until lightly golden.
- Fill each shell with shredded chicken, top with cheese, lettuce, tomatoes, and avocado.
- Return filled tacos to the baking dish and bake for an additional 10 minutes until cheese is melted and bubbly. Drizzle with salsa before serving.
