- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 2 medium apples (Granny Smith or Honeycrisp), peeled and chopped
- 1 tsp cinnamon
- 2 tbsp granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed.
- Press the mixture firmly into the bottom of muffin tins lined with paper liners.
- In a separate bowl, beat softened cream cheese until smooth.
- Add sour cream and eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Spoon this cheesecake mixture over each crust layer in the muffin tin.
- In a skillet over medium heat, sauté chopped apples with cinnamon and sugar until tender but still intact.
- Generously spoon the apple mixture on top of each cheesecake layer.
- Bake in preheated oven for about 20 minutes or until slightly jiggly in the center.
- Allow to cool completely before removing from muffin tins; then chill in the refrigerator for at least one hour before serving.
