Description

Indulge in a moist and flavorful Healthy Carrot Cake, packed with natural sweetness and wholesome ingredients, perfect for any occasion or a guilt-free treat.

Ingredients

Scale
  • 1 ½ cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup grated carrots (about 2 medium)
  • ¾ cup Greek yogurt
  • ½ cup honey or maple syrup
  • 2 large eggs
  • 8 oz light cream cheese
  • 2 tbsp honey (for sweetening the frosting)
  • Chopped nuts (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan or line it with parchment paper.
  2. In a mixing bowl, whisk together whole wheat flour, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, mix Greek yogurt, honey (or maple syrup), eggs, and grated carrots until fully blended.
  4. Gradually fold the wet mixture into the dry ingredients using a spatula until just combined.
  5. Pour the batter into the prepared cake pan and smooth out the top. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake cools on a wire rack, prepare the frosting by mixing light cream cheese with honey until smooth and creamy.
  7. Once cooled, spread the cream cheese frosting generously over your Healthy Carrot Cake.
  8. Optionally, sprinkle chopped nuts on top for added texture before serving.
