Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan or line it with parchment paper.
- In a mixing bowl, whisk together whole wheat flour, baking powder, cinnamon, nutmeg, and salt until well combined.
- In another bowl, mix Greek yogurt, honey (or maple syrup), eggs, and grated carrots until fully blended.
- Gradually fold the wet mixture into the dry ingredients using a spatula until just combined.
- Pour the batter into the prepared cake pan and smooth out the top. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the cake cools on a wire rack, prepare the frosting by mixing light cream cheese with honey until smooth and creamy.
