Experience a delightful fusion of flavors with this Honey Lime Chicken & Avocado Rice Stack. Juicy, marinated chicken is grilled to perfection and layered over fluffy jasmine rice with creamy avocado slices. Topped with a zesty lime sauce, this colorful dish is not just a feast for the eyes but also a deliciously satisfying meal for any occasion.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 fresh limes (juiced)
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 ripe avocados (sliced)
  • 1 cup jasmine rice
  • 2 tbsp soy sauce (low-sodium)
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix lime juice, honey, minced garlic, soy sauce, and olive oil. Add chicken breasts to the mixture in a resealable bag or container, seal, and refrigerate for at least 30 minutes.
  2. 2. Cook the Rice: Rinse jasmine rice under cold water. Combine rice and water in a saucepan according to package instructions. Bring to boil over medium heat, then reduce heat and simmer covered for 15-20 minutes until tender.
  3. 3. Grill or Bake Chicken: Preheat grill or oven to medium-high heat (400°F/200°C). Remove chicken from marinade (discard marinade) and grill for about 6-7 minutes per side or bake on a lined sheet for about 20-25 minutes until cooked through.
  4. 4. Prepare Avocados: Slice avocados in half, remove pits, scoop out flesh, and slice into wedges. Sprinkle lightly with salt and lime juice.
  5. 5. Assemble Your Stack: Layer cooked jasmine rice at the base of your plate, top with grilled chicken slices, and finish with avocado wedges. Drizzle with leftover lime sauce if desired.
