  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup fresh salsa
  • 1 ripe avocado, diced
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the russet potatoes until clean, then cut them into bite-sized cubes.
  3. Toss the potato cubes in olive oil, salt, and pepper.
  4. Spread the potatoes evenly on a parchment-lined baking sheet and bake for 25-30 minutes until golden brown and crispy.
  5. In a skillet over medium heat, add ground beef or turkey along with taco seasoning.
  6. Cook until browned and fully cooked through, about 5-7 minutes.
  7. Add the drained black beans to the skillet with the meat mixture.
  8. Stir until heated through, about 2-3 minutes.
