  • 1 medium head of cauliflower (about 600g), cut into florets
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp tahini
  • 2 tbsp raw honey
  • 2 tbsp water (to thin sauce)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine cauliflower florets, olive oil, cumin, paprika, salt, and pepper. Toss until evenly coated.
  3. Spread the seasoned florets on the prepared baking sheet in a single layer and roast for 25-30 minutes until golden brown, flipping halfway through.
  4. While the cauliflower roasts, whisk together tahini, honey, water, and a pinch of salt in a small bowl until smooth.
  5. Once roasted, transfer cauliflower to a serving platter, drizzle with tahini-honey sauce, and garnish with chopped parsley.
