Description

Nando’s Portuguese Chicken & Rice is a flavor-packed dish featuring succulent marinated chicken paired with fluffy rice, perfect for gatherings or weeknight dinners.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 cup long-grain white or brown rice
  • 2 cups chicken broth (or vegetable broth)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. In a large bowl, combine minced garlic, smoked paprika, cayenne pepper, lemon juice, and olive oil. Mix well.
  2. Add chicken breasts to the marinade and coat evenly. Let marinate for at least one hour or overnight for deeper flavor.
  3. Rinse the rice under cold water.
  4. In a medium saucepan over medium heat, combine rinsed rice and chicken broth. Bring to a boil.
  5. Reduce heat to low, cover, and let simmer for about 15-20 minutes until cooked through.
  6. Preheat your grill over medium-high heat or your oven to 400°F (200°C).
  7. Remove chicken from marinade and grill or bake for about 6-8 minutes on each side or until fully cooked (internal temperature should reach at least 165°F/75°C).
  8. Fluff cooked rice gently with a fork.
  9. Plate the rice and top with grilled chicken. Drizzle any remaining juices over the dish before serving.
