Nando’s Portuguese Chicken & Rice is a flavor-packed dish featuring succulent marinated chicken paired with fluffy rice, perfect for gatherings or weeknight dinners.

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 tsp smoked paprika
- 1 tsp cayenne pepper (adjust to taste)
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 cup long-grain white or brown rice
- 2 cups chicken broth (or vegetable broth)
- 2 tbsp low-sodium soy sauce
Instructions
- In a large bowl, combine minced garlic, smoked paprika, cayenne pepper, lemon juice, and olive oil. Mix well.
- Add chicken breasts to the marinade and coat evenly. Let marinate for at least one hour or overnight for deeper flavor.
- Rinse the rice under cold water.
- In a medium saucepan over medium heat, combine rinsed rice and chicken broth. Bring to a boil.
- Reduce heat to low, cover, and let simmer for about 15-20 minutes until cooked through.
- Preheat your grill over medium-high heat or your oven to 400°F (200°C).
- Remove chicken from marinade and grill or bake for about 6-8 minutes on each side or until fully cooked (internal temperature should reach at least 165°F/75°C).
- Fluff cooked rice gently with a fork.
- Plate the rice and top with grilled chicken. Drizzle any remaining juices over the dish before serving.
