Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots if necessary. Cut them into uniform pieces, about two inches long, and place them in a large mixing bowl.
- Drizzle olive oil over the carrots and add honey, salt, and pepper. Toss until each carrot is well coated.
- Spread the seasoned carrots in a single layer on a baking sheet lined with parchment paper. Roast for about 20-25 minutes or until tender and slightly caramelized.
- While the carrots are roasting, mix ricotta cheese with lemon juice and a pinch of salt in a separate bowl.
- Use an electric mixer or whisk until fluffy and creamy.
