  • 1 lb boneless, skinless chicken thighs
  • 3 cups day-old cooked rice
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1/2 cup chopped green onions
  • 2 tbsp olive oil (divided)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin
  • Salt and pepper to taste

Instructions

  1. Cut chicken thighs into bite-sized pieces. Season with salt and pepper.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, add remaining oil (if needed) and sauté diced carrots and bell peppers until slightly softened (3-4 minutes). Add green onions during the last minute.
  4. Stir in day-old rice, breaking up clumps as you mix for another 3-4 minutes until heated.
  5. Combine soy sauce and mirin in a small bowl; pour over the rice mixture and stir well for another minute.
  6. Return the chicken to the skillet, mixing everything thoroughly until heated through.
  7. Serve hot, garnished with extra green onions if desired.
