Description
Delight in a quick and flavorful shrimp stir fry with noodles, featuring succulent shrimp, colorful vegetables, and a savory sauce that’s ready in just 30 minutes!
Ingredients
Scale
- 1 lb medium shrimp (fresh or thawed)
- 8 oz egg noodles (or rice noodles)
- 1 cup bell peppers (sliced, mixed red and green)
- 1 cup broccoli florets (lightly steamed)
- 1 cup carrots (julienned)
- 4 tbsp low-sodium soy sauce
- 2 tbsp toasted sesame oil
Instructions
- 1. Cook the Noodles: Bring a large pot of salted water to boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.
- 2. Prep Your Veggies: While the noodles cook, chop bell peppers, broccoli florets, and carrots into bite-sized pieces.
- 3. Sauté Shrimp: In a large skillet or wok over medium-high heat, add 1 tablespoon of sesame oil. Once hot, toss in shrimp and sauté until pink and opaque—about three minutes per side. Remove from pan and set aside.
- 4. Stir-Fry Vegetables: In the same skillet, add more sesame oil if needed. Toss in your chopped veggies and stir-fry until tender-crisp—around five minutes.
- 5. Combine Everything: Add cooked noodles back into the skillet along with cooked shrimp. Pour soy sauce over everything and toss gently for an additional two minutes.
- 6. Serve It Up: Transfer your vibrant creation onto plates or bowls. Drizzle with any remaining sauce from the pan and garnish with sesame seeds if desired!
