  • 56 tbsp cold water
  • 2 cups fresh strawberries, sliced
  • ¾ cup granulated sugar (adjust based on sweetness of strawberries)
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. In a bowl, mix flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water until dough holds together. Roll out onto a floured surface.
  3. Fit into a pie dish and refrigerate while preparing the filling.
  4. In a medium saucepan over medium heat, combine sliced strawberries and granulated sugar; cook until bubbly (about 5 minutes).
  5. Stir in cornstarch mixed with water; cook until thickened (about 1 minute). Remove from heat and add vanilla extract.
  6. Pour filling into prepared pie crust.
  7. Cover with another layer of pie crust or use cookie cutters for fun shapes.
  8. Seal edges by crimping together. Bake at 375°F (190°C) for 25-30 minutes or until golden brown.
  9. Allow to cool for about 15 minutes before drizzling with icing made from powdered sugar and milk.
