Ingredients

Scale
  • 12 oz smoked kielbasa sausage, sliced
  • 8 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot. Add penne and cook until al dente according to package instructions. Drain, reserving ½ cup of pasta water.
  2. Sauté the Kielbasa: In a skillet over medium heat, add olive oil. Once hot, cook sliced kielbasa until browned on both sides (about 5-7 minutes). Remove from skillet.
  3. Cook the Vegetables: In the same skillet, sauté garlic for 30 seconds. Add zucchini and bell pepper; cook for 4-5 minutes. Stir in cherry tomatoes until they burst.
  4. Combine Ingredients: Return kielbasa to the skillet with veggies. Add drained pasta and toss gently; use reserved pasta water if needed for consistency.
  5. Finish with Basil: Remove from heat; stir in chopped basil. Season with salt and pepper as desired.
