Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a medium bowl, whisk together all-purpose flour and baking powder; set aside.
- In a large bowl, beat unsalted butter and granulated sugar until light and fluffy (about three minutes). Mix in honey until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients to the wet mixture, alternating with milk (if using), starting and ending with dry ingredients. Mix until just combined.
- Pour batter evenly into prepared pans and bake for 25-30 minutes or until golden brown; a toothpick should come out clean when inserted into the center.
- While cakes cool, whip together softened cream cheese, brewed coffee, and powdered sugar until creamy and smooth.
- Once cakes are completely cool, layer one cake on a serving plate, spread frosting on top, then place the second layer on top. Frost generously around the sides and top of the cake.
