Description

Enjoy the delightful harmony of honey and coffee in this moist Vanilla Honey Cake, topped with creamy frosting—a perfect treat for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup milk (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup brewed coffee (strong)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a medium bowl, whisk together all-purpose flour and baking powder; set aside.
  3. In a large bowl, beat unsalted butter and granulated sugar until light and fluffy (about three minutes). Mix in honey until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk (if using), starting and ending with dry ingredients. Mix until just combined.
  6. Pour batter evenly into prepared pans and bake for 25-30 minutes or until golden brown; a toothpick should come out clean when inserted into the center.
  7. While cakes cool, whip together softened cream cheese, brewed coffee, and powdered sugar until creamy and smooth.
  8. Once cakes are completely cool, layer one cake on a serving plate, spread frosting on top, then place the second layer on top. Frost generously around the sides and top of the cake.
