Description

A refreshing summer salad bursting with juicy peaches, sweet blueberries, and creamy feta, perfect for picnics or elegant dinners.


Ingredients

  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 4 cups mixed greens (arugula and spinach)
  • 1/3 cup walnuts or pecans, toasted
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the peaches and blueberries thoroughly. Slice the peaches into wedges and set aside.
  2. In a dry skillet over medium heat, add walnuts or pecans. Toast for about 3-5 minutes until fragrant and golden brown.
  3. In a large salad bowl, layer the mixed greens as the base. Add sliced peaches and blueberries on top. Sprinkle crumbled feta cheese over the salad.
  4. In a small bowl, whisk together balsamic vinegar and olive oil. Add salt and pepper to taste.
  5. Drizzle dressing over the salad and gently toss everything together until well combined.
