- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1/2 cup crumbled feta cheese
- 4 cups mixed greens (arugula and spinach)
- 1/3 cup walnuts or pecans, toasted
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash the peaches and blueberries thoroughly. Slice the peaches into wedges and set aside.
- In a dry skillet over medium heat, add walnuts or pecans. Toast for about 3-5 minutes until fragrant and golden brown.
- In a large salad bowl, layer the mixed greens as the base. Add sliced peaches and blueberries on top. Sprinkle crumbled feta cheese over the salad.
- In a small bowl, whisk together balsamic vinegar and olive oil. Add salt and pepper to taste.
- Drizzle dressing over the salad and gently toss everything together until well combined.
- Transfer to plates or serve straight from the bowl. Garnish with extra nuts or feta if desired.
