  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 4 large tortilla wraps
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, mix minced garlic, mozzarella, cheddar, basil, and parsley.
  4. Lay out tortillas flat. Place one seasoned chicken breast on each tortilla and generously spoon the cheese-garlic-herb mixture over each piece.
  5. Roll tortillas tightly around the chicken. Place seam-side down in the baking dish. Drizzle with olive oil.
