- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1/4 cup fresh lime juice
- 1 cup bell peppers (mixed colors, sliced)
- 1/2 cup red onion (thinly sliced)
- 2 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) or prepare your grill.
- Cut four large sheets of heavy-duty aluminum foil, about two feet long.
- In a bowl, mix lime juice, chili powder, garlic powder, salt, and pepper. Marinate the chicken breasts in this mixture for at least 15 minutes.
- On each sheet of foil, place a scoop of uncooked rice in the center. Layer with bell peppers and red onion slices. Top each pack with one marinated chicken breast.
- Fold the sides of the foil over the ingredients to seal tightly.
- Arrange the foil packs on a baking sheet or directly on the grill. Cook for 25-30 minutes or until the chicken reaches an internal temperature of at least 165°F (75°C).
- Serve with an extra drizzle of lime juice.
