  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1/4 cup fresh lime juice
  • 1 cup bell peppers (mixed colors, sliced)
  • 1/2 cup red onion (thinly sliced)
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your grill.
  2. Cut four large sheets of heavy-duty aluminum foil, about two feet long.
  3. In a bowl, mix lime juice, chili powder, garlic powder, salt, and pepper. Marinate the chicken breasts in this mixture for at least 15 minutes.
  4. On each sheet of foil, place a scoop of uncooked rice in the center. Layer with bell peppers and red onion slices. Top each pack with one marinated chicken breast.
  5. Fold the sides of the foil over the ingredients to seal tightly.
  6. Arrange the foil packs on a baking sheet or directly on the grill. Cook for 25-30 minutes or until the chicken reaches an internal temperature of at least 165°F (75°C).
  7. Serve with an extra drizzle of lime juice.
