  • 4 cloves fresh garlic, minced

  • 2 bell peppers (any color), chopped
  • 3 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C). Prepare a baking dish with nonstick cooking spray.
  2. Create marinade by whisking together olive oil, lemon juice, minced garlic, dried oregano, and soy sauce in a bowl.
  3. Place chicken breasts in a zip-top bag or dish. Pour marinade over chicken, seal or cover, and let marinate for at least 30 minutes.
  4. While chicken marinates, chop bell peppers into bite-sized pieces and toss them with olive oil, salt, and pepper.
  5. Add marinated chicken and bell peppers to the baking dish. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Plate the chicken and veggies; drizzle leftover marinade over the top for added flavor.
