  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs (plain or Italian)

  • 2 lbs Russet potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk or heavy cream
  • 2 cups low-sodium beef broth
  • 2 tbsp soy sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine ground beef, onion, garlic, breadcrumbs, egg, salt, and pepper. Mix until just combined.
  3. Shape mixture into golf ball-sized meatballs and place on the baking sheet. Bake for 20-25 minutes until golden brown.
  4. Boil peeled potatoes in salted water until fork-tender (about 15-20 minutes). Drain and return to pot.
  5. Add butter, milk or cream, minced garlic, salt, and pepper to the potatoes; mash until smooth.
