  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the drained white beans and vegetable broth to the pot. Stir well to combine.
