Description

Crispy St. Patrick’s Irish Bangers & Mash Cups are a festive twist on a classic comfort food, featuring savory sausage and creamy mashed potatoes in a delightful golden crust.


Ingredients

  • 1 lb. chicken or vegetarian sausages
  • 2 cups starchy potatoes (such as Russets)
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin with nonstick cooking spray.
  2. In a skillet over medium heat, cook the chicken or vegetarian sausages until browned and cooked through, about 10 minutes. Slice them into small pieces and set aside.
  3. Peel and chop the potatoes into even-sized chunks. Boil in salted water until fork-tender, approximately 15 minutes.
  4. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
  5. Place some chopped sausage at the bottom of each muffin tin cavity, followed by spoonfuls of mashed potatoes on top. Sprinkle shredded cheddar cheese generously over each cup.
  6. Place the muffin tin in your preheated oven for about 15-20 minutes or until the tops are golden brown and crispy. Remove from oven and sprinkle with fresh parsley before serving.
