- 1 lb. chicken or vegetarian sausages
- 2 cups starchy potatoes (such as Russets)
- 4 tbsp unsalted butter
- 1/2 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 2 tbsp chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Grease a muffin tin with nonstick cooking spray.
- In a skillet over medium heat, cook the chicken or vegetarian sausages until browned and cooked through, about 10 minutes. Slice them into small pieces and set aside.
- Peel and chop the potatoes into even-sized chunks. Boil in salted water until fork-tender, approximately 15 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
- Place some chopped sausage at the bottom of each muffin tin cavity, followed by spoonfuls of mashed potatoes on top. Sprinkle shredded cheddar cheese generously over each cup.
- Place the muffin tin in your preheated oven for about 15-20 minutes or until the tops are golden brown and crispy. Remove from oven and sprinkle with fresh parsley before serving.
