  • 23 lbs beef chuck roast, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 2 bell peppers (red or green), diced
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 4 cups low-sodium beef broth
  • 2 tbsp sweet paprika
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)

Instructions

  1. Gather all ingredients. Season the beef with salt and pepper. Chop onion, garlic, and dice bell peppers and carrots.
  2. In a large pot or Dutch oven over medium-high heat, add a splash of oil. Once hot, add the seasoned beef chunks and brown on all sides for about 5-7 minutes.
  3. Remove the browned beef from the pot. In the same pot, add onions and garlic; sauté until translucent (about 3 minutes). Add bell peppers and carrots and cook for another few minutes.
  4. Return the browned beef to the pot. Pour in the canned tomatoes along with their juices and enough beef broth to cover everything (about four cups). Sprinkle paprika over the mixture.
  5. Bring to a gentle boil before reducing heat to low. Cover and let simmer for at least one hour, stirring occasionally.
  6. Once thickened and fragrant (after about an hour), taste and adjust seasoning if necessary. Serve over egg noodles or rice, with crusty bread on the side.
