Ideal for a picnic or a light dinner, this recipe will transport you to sunny gatherings with family and friends.

Ingredients

Scale
  • 2 skinless salmon fillets (6 oz each)
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 medium cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Place salmon fillets on the sheet, season with salt and pepper, drizzle with olive oil, and bake for 15-20 minutes until flaky.
  2. While the salmon bakes, wash and dry mixed greens. In a large bowl, combine sliced cucumber, halved cherry tomatoes, and red onion.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as desired.
  4. Let the cooked salmon cool slightly before flaking it into large pieces. Add to the bowl of vegetables.
  5. Drizzle dressing over the salad and gently toss to combine without breaking up the salmon too much.
  6. Serve immediately for an impressive presentation.
