- Salt and pepper to taste
Instructions
- Rinse wild rice under cold water until clear. In a saucepan, combine rice with vegetable broth. Bring to boil, then reduce heat and simmer covered for about 45 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Sauté onion and celery for 5 minutes until softened. Add mushrooms and cook until golden brown.
- Fluff cooked rice with a fork and combine with sautéed vegetables in the skillet. Add thyme, salt, and pepper to taste.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until slightly crispy on top.
