- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 1/3 cup pure honey
- 1/4 cup freshly squeezed lime juice
- 1/4 cup low-sodium soy sauce
- 1 cup jasmine or basmati rice
- 1 ripe avocado
- Salt and pepper to taste
- Zest from 1 lime (optional)
Instructions
- In a bowl, combine honey, lime juice, minced garlic, and soy sauce.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal tightly or cover and marinate in the fridge for at least 30 minutes.
- Preheat your grill to medium-high heat. Remove chicken from marinade (reserve marinade) and grill for about six minutes per side until cooked through.
- Rinse jasmine rice under cold water until it runs clear. Add it to a pot with two cups of water and bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
- Once cooked, mash ripe avocado into the rice; add salt, pepper, and lime zest if desired.
- Spoon generous amounts of avocado rice into bowls.
- Slice grilled chicken and place atop the avocado rice.
- Drizzle leftover marinade over everything before serving.
