Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1/3 cup pure honey
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup low-sodium soy sauce
  • 1 cup jasmine or basmati rice
  • 1 ripe avocado
  • Salt and pepper to taste
  • Zest from 1 lime (optional)

Instructions

  1. In a bowl, combine honey, lime juice, minced garlic, and soy sauce.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal tightly or cover and marinate in the fridge for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Remove chicken from marinade (reserve marinade) and grill for about six minutes per side until cooked through.
  4. Rinse jasmine rice under cold water until it runs clear. Add it to a pot with two cups of water and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  6. Once cooked, mash ripe avocado into the rice; add salt, pepper, and lime zest if desired.
  7. Spoon generous amounts of avocado rice into bowls.
  8. Slice grilled chicken and place atop the avocado rice.
  9. Drizzle leftover marinade over everything before serving.
