- Juice of 2 limes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooked pasta, black beans, corn, cherry tomatoes, red bell pepper, and cilantro.
