  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked pasta, black beans, corn, cherry tomatoes, red bell pepper, and cilantro.
