  • ½ cup unsalted butter, melted
  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, puréed
  • 4 oz dark chocolate, melted

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. Blend strawberries until smooth; strain to remove seeds.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Incorporate sour cream and vanilla.
  4. Mix half the batter with melted chocolate.
  5. Layer plain batter in the crust; dollop chocolate and strawberry mixtures over it, swirling gently.
  6. Bake for 50-60 minutes until set around edges but jiggly in center. Cool gradually in the oven with door ajar.
