- 1/2 cup unsalted butter, cold and cubed
- 1 tbsp fresh lemon juice
- 1 egg (for egg wash)

Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, toss sliced apples with lemon juice, granulated sugar, brown sugar, and cinnamon until well coated.
- In another bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water until the dough holds together. Divide into two discs and chill for 30 minutes.
- Roll out one disc on a floured surface into a rectangle, transfer to the baking sheet, and spread the apple mixture evenly on top. Roll out the second disc and place it over the filling; seal edges by pressing down.
- Beat the egg with a tablespoon of water; brush this mixture over the top crust.
