- 2 medium-sized sweet potatoes
- 2 cups shredded boneless chicken breast (cooked)
- 1/2 cup BBQ sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 green onions (chopped, optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and pierce each sweet potato several times with a fork. Place them on the prepared baking sheet.
- Bake for 45-60 minutes until tender.
- In a skillet over medium heat, add a little oil and the shredded chicken along with the BBQ sauce. Stir and heat for about 5-7 minutes until warmed through.
- Once the sweet potatoes are cooked, let them cool slightly before slicing them open lengthwise.
- Fluff the insides with a fork and spoon in generous amounts of the BBQ chicken mixture.
- Top each stuffed potato with shredded cheese and return to the oven for an additional 5-10 minutes until melted.
- Remove from the oven and sprinkle with chopped green onions if desired.
- Serve immediately while warm, drizzled with extra BBQ sauce.
