Description

  • 2 medium-sized sweet potatoes
  • 2 cups shredded boneless chicken breast (cooked)
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 green onions (chopped, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and pierce each sweet potato several times with a fork. Place them on the prepared baking sheet.
  3. Bake for 45-60 minutes until tender.
  4. In a skillet over medium heat, add a little oil and the shredded chicken along with the BBQ sauce. Stir and heat for about 5-7 minutes until warmed through.
  5. Once the sweet potatoes are cooked, let them cool slightly before slicing them open lengthwise.
  6. Fluff the insides with a fork and spoon in generous amounts of the BBQ chicken mixture.
  7. Top each stuffed potato with shredded cheese and return to the oven for an additional 5-10 minutes until melted.
  8. Remove from the oven and sprinkle with chopped green onions if desired.
