- 1/2 cup panko breadcrumbs
- 2 tbsp soy sauce
- 1 cup full-fat coconut milk
- 2 tbsp fresh lime juice
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, coconut flakes, minced garlic, chopped green onions, egg, breadcrumbs, and soy sauce. Mix until just combined.
- Form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
- Bake for approximately 20 minutes or until golden brown and cooked through (internal temperature of at least 165°F or 74°C).
- In a saucepan over medium heat, combine coconut milk and lime juice. Stir gently until warmed through but not boiling.
