Ingredients

  • 1/2 cup unsweetened coconut flakes
  • 3 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 2 tbsp soy sauce
  • 1 cup full-fat coconut milk
  • 2 tbsp fresh lime juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, coconut flakes, minced garlic, chopped green onions, egg, breadcrumbs, and soy sauce. Mix until just combined.
  3. Form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  4. Bake for approximately 20 minutes or until golden brown and cooked through (internal temperature of at least 165°F or 74°C).
  5. In a saucepan over medium heat, combine coconut milk and lime juice. Stir gently until warmed through but not boiling.
