  • 1 lb lean ground turkey
  • 1 cup fresh cranberries, chopped
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup onion, finely diced
  • 1/2 cup celery, finely diced
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh sage, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, heat olive oil and sauté onion and celery until softened (about 5 minutes). Let cool slightly.
  3. In a large bowl, mix together ground turkey, sautéed vegetables, cranberries, breadcrumbs, eggs, herbs, salt, and pepper until well combined.
  4. Form mixture into balls about one inch in diameter and place on the prepared baking sheet.
