  • 2 large flour tortillas (10-inch)
  • 1 cup bell peppers, diced (any color)
  • 1/2 cup onion, diced
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt to taste
  • 1 tbsp olive oil

Instructions

  1. 1. Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers. Sauté until tender, about 5 minutes.
  2. 2. Stir in rinsed black beans, cumin, chili powder, garlic powder, and salt. Cook for an additional 5 minutes to meld flavors.
  3. 3. On each tortilla, spoon a portion of the black bean mixture and top with shredded cheddar cheese.
  4. 4. Roll up the sides of the tortilla first, then fold in the bottom before wrapping tightly.
