- 2 large flour tortillas (10-inch)
- 1 cup bell peppers, diced (any color)
- 1/2 cup onion, diced
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt to taste
- 1 tbsp olive oil
Instructions
- 1. Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers. Sauté until tender, about 5 minutes.
- 2. Stir in rinsed black beans, cumin, chili powder, garlic powder, and salt. Cook for an additional 5 minutes to meld flavors.
- 3. On each tortilla, spoon a portion of the black bean mixture and top with shredded cheddar cheese.
- 4. Roll up the sides of the tortilla first, then fold in the bottom before wrapping tightly.
- 5. Place seam-side down on a pan over medium heat. Cook each side for about 3 minutes until golden brown.
