  • 4 cups fresh spinach (approximately 120g)
  • 1 cup sliced mushrooms (approximately 70g)
  • 1 cup heavy cream (240ml)
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese (50g)
  • 2 tbsp olive oil (30ml)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the spinach under cold water, drain well, and set aside. Slice the mushrooms evenly.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until golden brown, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté for another minute until fragrant.
  4. Gradually stir in the fresh spinach until wilted, seasoning with salt and pepper.
  5. Pour in the heavy cream and simmer on low for about five minutes until slightly thickened. Add Parmesan cheese and mix until melted.
  6. Serve warm, drizzled with any remaining sauce.
