Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom of the prepared pan. Bake for about 10 minutes or until lightly golden.
- In a large mixing bowl, beat softened cream cheese and sugar until smooth.
- Add pumpkin puree and mix until combined.
- Incorporate eggs one at a time, mixing well after each addition. Then stir in vanilla extract, cinnamon, nutmeg, and ginger until well blended.
- Pour the filling over the baked crust and spread evenly.
- Bake for about 30-35 minutes or until set but slightly wobbly in the center.
- Let the bars cool in the pan for about an hour before transferring to the refrigerator.
- Chill for at least two hours (or overnight) before slicing into squares.
