Instructions
- Preheat oven to 400°F (200°C). In a bowl, mix ground meat, breadcrumbs, garlic, parsley, mint, salt, and pepper.
- Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- Cook rice according to package instructions until fluffy.
- In another bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper to make tzatziki.
- Serve by layering rice at the bottom of bowls topped with meatballs, cherry tomatoes, red onion slices, and tzatziki.
