  • 1 lb lean ground beef or lamb
  • 1 cup fresh breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup jasmine or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup thick Greek yogurt
  • 1/2 cucumber, grated
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix ground meat, breadcrumbs, garlic, parsley, mint, salt, and pepper.
  2. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Bake for 20-25 minutes until golden brown and cooked through.
  4. Cook rice according to package instructions until fluffy.
  5. In another bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper to make tzatziki.
  6. Serve by layering rice at the bottom of bowls topped with meatballs, cherry tomatoes, red onion slices, and tzatziki.
