Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook crumbled breakfast sausage until browned. Add diced bell peppers and sauté until softened. In a bowl, whisk eggs with salt and pepper then pour into the skillet. Cook until just set but slightly runny.
- Roll out puff pastry on a floured surface and cut into rectangles (4×6 inches).
