  • 1 package puff pastry sheets (2 sheets)
  • 4 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked breakfast sausage, crumbled
  • ½ cup diced bell peppers
  • Salt and pepper to taste
  • 2 tbsp melted butter (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook crumbled breakfast sausage until browned. Add diced bell peppers and sauté until softened. In a bowl, whisk eggs with salt and pepper then pour into the skillet. Cook until just set but slightly runny.
  3. Roll out puff pastry on a floured surface and cut into rectangles (4×6 inches).
  4. Place a spoonful of the egg mixture on one side of each rectangle, sprinkle with cheddar cheese, then fold over and seal edges with a fork.
  5. Brush tops with melted butter and bake for 20-25 minutes until golden brown.
