Description

Parmesan Chicken Meatloaf is a flavorful, healthy twist on a classic dish, featuring tender ground chicken and savory Parmesan cheese for an impressive family meal.

Ingredients

Scale
  • 1 lb ground chicken
  • 1 cup freshly grated Parmesan cheese
  • 1 cup plain breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic powder
  • 2 tbsp fresh basil, chopped (or 2 tsp dried basil)
  • 2 tbsp fresh parsley, chopped (or 2 tsp dried parsley)
  • 1 large egg
  • 1/2 cup ketchup
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Preheat Your Oven: Preheat your oven to 375°F (190°C). Prepare a baking dish or loaf pan by spraying it with nonstick cooking spray.
  2. Mix Your Ingredients: In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, chopped onion, garlic powder, basil, parsley, and egg. Mix gently until just combined to avoid overmixing.
  3. Shape Your Meatloaf: Transfer the mixture to the prepared baking dish or shape it into a loaf on a lined baking sheet. Aim for an even loaf shape.
  4. Prepare the Sauce: In a small bowl, mix ketchup with balsamic vinegar if using. Spread this sauce generously over the top of the meatloaf.
  5. Bake It Up: Place the meatloaf in the preheated oven and bake for about 45-55 minutes or until cooked through. The internal temperature should reach at least 165°F (74°C).
  6. Serve It Up: Let the meatloaf rest for about ten minutes before slicing to allow juices to redistribute. Serve with additional sauce drizzled on top.
