  • 2 large eggs
  • 1 cup panko breadcrumbs

  • 1 tbsp lemon juice
  • 4 brioche buns
  • Lettuce or pickles (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up three bowls: one with seasoned flour, one with whisked eggs, and one with panko breadcrumbs mixed with Cajun spice mix.
  3. Coat each chicken breast in flour, dip in eggs, then roll in panko breadcrumbs until fully coated.
  4. Place breaded chicken on the baking sheet and bake for 20-25 minutes until golden brown and cooked through (165°F internal temperature), flipping halfway through.
