- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 2 tbsp Cajun spice mix
- 1/2 cup mayonnaise
- 2 cloves fresh garlic, minced
- 1 tbsp lemon juice
- 4 brioche buns
- Lettuce or pickles (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up three bowls: one with seasoned flour, one with whisked eggs, and one with panko breadcrumbs mixed with Cajun spice mix.
- Coat each chicken breast in flour, dip in eggs, then roll in panko breadcrumbs until fully coated.
- Place breaded chicken on the baking sheet and bake for 20-25 minutes until golden brown and cooked through (165°F internal temperature), flipping halfway through.
- In a small bowl, combine mayonnaise, minced garlic, lemon juice, and a pinch of salt. Stir until smooth.
- Once chicken is done baking, let it rest briefly before assembling.
- Toast brioche buns if desired. Spread garlic aioli on both sides of each bun.
- Place crispy chicken between the buns and add lettuce or pickles if desired.
