  • 1 cup fresh pomegranate seeds
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by rinsing and draining the canned chickpeas. Chop cucumber and cherry tomatoes; slice the red onion.
  2. In a large bowl, combine chickpeas, pomegranate seeds, cucumber, cherry tomatoes, red onion, and parsley. Toss gently.
  3. In a separate bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
